Pistachio pudding has been a household favorite around here for years, so of course we tossed some into our waffles. Our only question was what to top them with. A little brainstorming, and we came up with a very easy orange syrup. Is it the fanciest orange syrup around? No, but it did the trick on a moment’s notice. Ingredients are: orange juice, powdered sugar, corn starch. Heat it all up and drizzle it on your pistachio pudding waffles. Tada!
It starts with an ordinary waffle recipe and ends with a soft, sweet waffle. Our kids were skeptical at first, but once they tried, it they kept asking for more. When that happens, we know we’ve got a winner.
A box of pistachio pudding mix brings a subtle surprise for an anything but ordinary waffle.
- 1 package instant pistachio pudding
- 1 1/12 cups all-purpose flour
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 cup plain yogurt
- 1 cup milk
- 2 eggs
- 4 tablespoons melted butter
Heat up your waffle iron according to manufacturer’s instructions.
In a medium bowl, whisk the dry ingredients together.
In a large bowl, mix together the wet ingredients, adding the melted butter last, slowly.
Slowly add dry ingredients to wet ingredients and stir until just combined.
Pour batter into the waffle maker and cook until golden, about 5-6 minutes depending on your waffle iron.
Top with powdered sugar or homemade orange sauce.
