We thought — if some berries are good in a waffle, lots of berries must be outstanding, right? Yes, right. We thought about calling them “mega-antioxidant waffles” because of all the berries, but then we decided to just focus on how crazy delicious berries are, and leave the antioxidant talk to nutritionists.
These waffles are packed with strawberries, raspberries, and blueberries in equal amounts, but you can use any combination of berries you love to get your perfect berry, berry tasty waffles. Eat them plain or top them with whipped cream and more berries.
Three-Berry Muffin Waffles
Packed full of wholesome berries, these waffles are a sure hit.
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, beaten
- 3/4 cup milk
- 4 tablespoons butter, melted
- 1 teaspoon vanilla
- 3/4 cups strawberries, chopped, fresh or frozen
- 3/4 cups blueberries, fresh or frozen
- 3/4 cups raspberries, fresh or frozen
Heat up your waffle iron according to manufacturer’s instructions.
In a medium bowl, whisk the dry ingredients together.
In a large bowl, whisk together the eggs and milk until frothy, then mix in the melted butter.
Add the berries.
Slowly add the flour mixture to wet ingredients, stirring until just combined.
Pour batter into the waffle maker according to manufacturer’s instructions and cook until golden, about 6 minutes depending on your waffle iron.
